  1. The Poolish: In a small jar put 6 tbs water at room temp then add 1/4 tsp active dry yeast and 4 tbs flour. Stir with a metal knife and then cover top with a plastic. Rest for 12-16 hours or overnight. In the morning, with a spoon stir the poolish which is nice and fermented.
  2. In a very big basin add 4 cups water, then add the honey then add the poolish yeast then add the flour little by little of 2 cups while keep on stirring with a spoon. Then we don't touch the dough anymore. Let it rest for more 15' covered.

Now the structure of the dough is more stronger.Now we're going to cut the dough in 6.Flip it over the dough on the bench with a spatula, then to lift up the dough by putting the bottom dough on the palm of our hand, and on other hand on 2 top edges folded the dough into the centre closing the dough,then from underneath the dough who is still on the palm of hand, try to fold the several or 4 parts of the edges into the undeneath centre and closing the bottom centre,now the dough become rounded.
  5. In a rectangular tray, spray oil then sprinkle the flour on top. Place the 6 dough leave the space to one another, the bottom that's been closed put it on top of the tray. Put a little flour on top then cover with the plastic, let it rest for 4-6 hours at room temp. Now the dough size is expanded to almost 3 times.
  6. Now pre-heat the oven at least one hour before, turn the oven at the max temp, at 500 C.Take the plastic off very slowly & carefully as the plastic sticks on top of the dough.Sprinkle very lightly the top dough with flour. Loosen the bottom dough with the floured spatula, lift it up and flip the top onto my palm hand and then place the doug smooth top onto a rounded large dish sprinkled with flour, and flip over 4x the dough onto that floured dish.Now lift up the dough and place it on the bench.
  7. How to strech the dough.With both all fingers press&touch the dough from the centre towards the edges to form 1 inch border.Flip over & do the same.The dough is full of air.If it's sticky than put a little bit of flour.With right fingers you press the centre dough but with left hand you pull stretching the dough&pull horizontally on the left then quickly flip it over onto your right palm hand then put it into the first position laying on the bench, stretching with right hand on dough.

Repeat that several times.Now put back the dough flat onto the bench,spread on top with MyHomemade Pizza Sauce.Place the pizza on a giant spatula,from there you could stretch the pizza to pull all around to enlarge to 12 inches size.Move the spatula vibrating it.Open the oven door,place the pizza on the stone.The pizza is nice cooked when is puff& golden colour.Remove,brush olive oil on the border edge, spread the mozzarella,chicken pieces,sliced red capsicum& mushroom.Top drizzle with Olive oil
  9. Lastly spread the grated Cheddar Cheese on top. Then put pizza back again in the oven, bake 3' untill Mozzarella cheese melted. Remove. Place some basil leaves on top. Sprinkle on top leaves with Olive Oil. With the roller cutter cut each into 6 pieces. Enjoy 😍🧀🍕
